브런치 메뉴가 넘넘넘넘 먹고 싶어서 만든 식빵!
식빵은 사오면 금방이지만, 따끈따끈한 갓 구운 식빵이 먹고 싶더라고요~
직접 만든 식빵은 정성이 들어가서 그런지 더 맛있는 느낌♥

재료를 따로따로 준비하기는 번거로워서

밀가루의 수분 흡수력과 반죽 강도, 글루텐, 탄력, 볼륨 등을 느껴볼 수 있습니다.

우리밀 금강 백밀 125g
우리밀 조경 백밀 125g
물 190g
르방(발효종) 50g
소금 5g

*르방은 빵만들 기 전 미리 밥주기하여 준비합니다. (100% 수분율, 우리밀)

In this video, I made sourdough bread using Korean flour which is grown in Korea.
It is known for containing lower gluten and a little bit different character.
This is not a recipe. I wanted to see how much volume, oven spring, and elasticity, etc. I could get from the flour.

FYI, this video is quite long because I minimized editing it.

Geumgang Wheat Flour 125g (considered to be AP flour)
Jokyeong Wheat Flour 125g (considered to be bread flour)
Water 190g
Levain 50g
Salt 5g

Today, I introduce Milk Bread and Whole Wheat Bread recipe(No machine, with folding the dough).
**I made this style bread making recipe up through so many times of test, even I can't count**
You can make very soft and moist loaf bread very simply.
Step one. Mix every ingredient and rest it.
Step two. Let butter (or oil) absorb into the dough and then, prove and fold it.
If you don't have a kneading machine, or don't want to knead dough for 20min with your hand.
I recommend this bread recipe.
Enjoy very delicious bread at home♥

♣ Oven
190℃ / 374℉ for about 25min

♣ Ingredients (loaf pan 22.5*10.5*9.5cm)
* Some ingredient is not exactly same with that you measure ‘g’. But, I hope it will be helpful to you guys♥
** 1cup(250ml) \u0026 1Tbsp(15ml) **
# 1 Milk Bread
bread flour 300g (2cup)
** Refer it :: You can use 300g of all purpose flour as well.
But, the volume of bread will be smaller than original one.
And taste will be little bit different. (less fluffy)
Because, all purpose flour has less protein, that’s why it's difficult to develop gluten.
But, it's still good.**
sugar 30g (2Tbsp+1tsp)
salt 4g (1tsp)
instant dry yeast 3g (3/4tsp)

milk 105g (105ml)
water 110g (110ml)
* If your working place is ‘hot and humid’, use 10g (10ml) less water *

not cold room temperature unsalted butter or oil 10~20g (butter 2~4tsp, oil 1Tbsp~1+1/2Tbsp)
*It’s up to you how much butter or oil you will use
If you use more butter, the bread will be more soft

# 2 Whole Wheat Bread
Bread flour 220g (1+1/2cup)
Whole wheat flour 80g (1/2cup)
sugar 30g (2Tbsp+1tsp)
salt 4g (1tsp)
instant dry yeast 3g (3/4tsp)

milk 105g (105ml)
water 120g (120ml)
*whole wheat flour depends on the brand and environment, so don't add all of liquid at once, check how much your dough needs liquid.

not cold room temperature unsalted butter or oil 10~20g
(butter 2~4tsp, oil 1Tbsp~1+1/2Tbsp)
*It’s up to you how much butter or oil you will use
If you use more butter, the bread will be more soft

# Egg wash
1 egg yolk + milk 1Tbsp


♣ Q : My kitchen is so hot. Is it okay to proof bread? (Choose one)
A : (1) You can reduce the first proofing time. (40-30-40 min ☞ 35-25-35min)
Or (2) Can use tap water(not warm, little bit cold when you touch it) + cold milk to decrease temperature of dough.
